Cask-Conditioned Ipswich Ales: A Quintessential Match
|
Cask-conditioned
ales have been a standard technique in England for hundreds of years
and have recently seen a surge in popularity in beer bars across
America. Ipswich Ale's tradition of unfiltered English style ales are perfectly matched with this format of serving beer.
What is Cask-Conditioned Ale? The magic happens when an ale goes from the
fermentation tank into a special keg called a cask. From here our
brewer can add hops for additional flavor. Sugar is also added to help
the yeast carry out a secondary fermentation which lightly carbonates
the beer. Cask-condition ales are best dispensed by gravity or by
a handpump.

A Northshore classic, Ipswich Ale is a medium-bodied, unfiltered English style pale ale with subtle hoppiness and a smooth malty flavor. We use specially selected hops, including Willamette, an American variety of an English hop, to get its unique flavor.
